The cold weather is driving me Bananas

Here's a fun dessert sure to warm up a chilly fall evening...or maybe morning....yes, definitely a good thing for the morning. These simple little treats are fried bananas. They take just a few minutes, while the oil is heating up you can whip up the batter...and in just minutes be in heaven. Don't use browning bananas, they will fall apart. A good yellow but firm banana is your best bet. Enjoy.
COCONUT FRIED BANANAS
6 ripe bananas
¼ cup flour
¼ cup cornstarch
1 teaspoon cinnamon
10 tbsp water
1 cup sweetened shredded coconut
1 cup vegetable oil

Mix the flour, cornstarch, cinnamon, and water in a medium sized bowl. Dip the bananas in the batter then coat them with the shredded coconut over a plate. Heat oil over medium-high heat. Fry in oil for a few minutes each side, or until bananas are light golden brown. Drain on Paper towels. Serve with chocolate or caramel sauce.
