Dignified Snacking

There is something gratifying when you find a quick and easy snack food, that you don't feel like a glutton eating. When I open a bag of cheetos and lick the orange pseudo cheese off my fingers, I begin to regret my snack choice. Of course, it is always after I have eaten the bag. So, I love it when I have something that is not only tempting to eat, but guiltless. Try it, take it to a party...enjoy.

Baked Bruchetta

8 roma tomatoes hulled and diced very small
1 small red onion diced
1 small can chopped black olives
2 roasted bell peppers
2 tsp. chopped garlic, roasted
salt and pepper
4 Tbsp. Basalmic vinegar
1 Tbsp. Olive oil
¾ cup parmesan
½ cup mozzarella, grated
baguette sliced thin
garlic oil

Brush slices of baguette with garlic oil and sprinkle with ¼ cup parmesan. Toast in a 350 degree oven until golden brown. Combine tomato, onion, olives, roasted peppers, garlic, vinegar, oil, and salt and pepper together in a gratin dish. Bake in a 350 degree oven for 20 minutes until very hot. Lastly, add the cheeses and bake until golden and bubbly. Serve with toasts. * this is also very tasty if you don't bake it. **omit the cheese if you want to reduce calories.
